Dan Dan Noodles (Vegan)

Ingredients

  • 4 oz of lo mein noodles

  • 4 oz of vegan ground beef

  • 1 stalk of baby bok choy

  • Cooking oil

  • 1 Tbsp sesame oil

  • Seasoning
  • 1 Tbsp soy sauce

  • 1 cloves of garlic

  • 1/2 Tbsp gochugaru

  • 1 tsp Sichuan peppercorn powder

  • 1 green onions

Directions

  • Wash, chop off ends of bok choy, and cut into roughly 1 inch by 1 inch large pieces.
  • Mince garlic and thinly slice green onions.
  • Heat cooking oil in a pan on medium high heat. Sauté vegan ground beef for 3 minutes. Add soy sauce and sauté for 3 more minutes or until desired crispiness. Set aside.
  • Bring a large pot of water to a boil and cook noodles according to package instructions. A minute before they're done cooking, add the bok choy.
  • Drain noodles, add a drizzle of cooking oil, and mix well to prevent sticking.
  • Add fried vegan ground beef on top.
  • Add the rest of the seasoning ingredients over vegan ground beef, in the center of the bowl.
  • Heat a small pan or pot with 1 Tbsp sesame oil and 1 Tbsp cooking oil until it starts smoking.
  • Pour hot oil over seasoning ingredients.
  • Mix well before enjoying!
