It takes 20 minutes to make and costs less than $2/serving. This is perfect for meal prepping and is not only healthy but comforting and satisfying too. You can use fresh ginger and garlic if you have those on hand, but otherwise all the flavors melt together so beautifully in the marinade for the tofu and the bok choy adds just the perfect crunch.

Tofu and Miso Bok Choy

Ingredients

  • 1 box firm or extra firm tofu

  • 4 stalks of baby bok choy

  • 1 Tbsp cooking oil

  • Flavors
  • 1 Tbsp miso

  • 1/2 Tbsp sesame oil

  • 2 tsp ginger powder

  • 2 tsp garlic powder

Directions

  • Dice tofu into cubes. Add to a large bowl.
  • Add all flavors into a bowl or measuring cup. Mix well and pour over tofu. Toss tofu in bowl and let marinate for at least 10 minutes.
  • Cut baby bok choy into 1 inch pieces.
  • Heat oil in large pan or wok. Add tofu and fry until golden brown.
  • Add bok choy and sauté for 5 minutes on medium heat.
  • Serve over jasmine rice (optional) and enjoy!
